Saving bees through gastronomy

A hive of bees

Homo Sapiens had everything to discover, including tastes. Sweetness was probably first experienced by biting into fruit, but also by catching a glimpse of the golden liquid produced by bees: honey. Rock paintings dating back almost 7,000 years show women gathering this product.

Since then, however, the situation for bees and other pollinating insects has not been the best. 25% of them have disappeared in recent years due to pesticide use, and climate change has led to desertification, particularly in Spain. Michelin-starred chef Maria José Martinez knows all about it. Since her youth, she has seen the landscape of her childhood gradually destroyed by warming temperatures.

For her, preserving bees is an absolute priority. To raise awareness at her restaurant, she bases her menu on honey sourced as much from her father's hives as from those of beekeepers trying to preserve what they can despite disasters. She is also part of an initiative to promote city beehives in Valencia, the last refuge for bees since insecticides are not used in city gardens. This ambassador could encourage the introduction of these insects to the UNESCO World Heritage List to protect them.
